Dinner Recipes
Bruschetta Burgers and Fries
bruschetta:
- one tomato
- half a cucumber
- 100g feta
- a few olives
burger sauce:
- four tablespoons yoghurt
- one tablespoon olive oil
- 100g feta
burgers:
- 300g mince meat
- one egg
- four kaiser rolls
- a few potatoes
how to make: dice tomato, cucumber, olives
and feta and put into a bowl. in a second bowl,
make burger sauce out of yoghurt, olive oil, the
other feta and salt and pepper. put both bowls
aside.
cut potatoes into thin, fry-like strips. put on
oven tray and cover with salt, pepper, garlic,
rosemary and a bit of oil. Bake in oven for about
35 minutes at 180 c. Meanwhile, in another bowl,
combine mince meat, egg, salt and pepper and
knead with your hands until mixed. Separate into
four patties. Bake these in a pan on medium heat
until thoroughly cooked through.
cut open kaiser rolls and put burger sauce on one
side. Put burger on the burger sauce and then
a scoop of bruschetta. repeat for all burgers.
serve alongside the ovenbaked fries and another
dollop of burger sauce to dip the fries in.
rating: I stole the idea of this from a chef's
plate box I ate while on vacation, though I've
edited it a lot. Could serve 2-4 depending on how
hungry you all are.
Chicken Salad with Yoghurt Dressing
dressing:
- four tablespoons of yoghurt
- one tablespoon of olive oil
- bit of pepper and salt
salad:
- 150g mixed salad greens (arugula etc)
- 100g prebaked sliced chicken (or ham)
- 120g corn (or one small tin)
how to make: in a small bowl, combine yoghurt,
olive oil and salt and pepper and mix well.
in a big bowl, put salad greens, chicken and
corn. pour dressing into this bowl and mix
everything together.
rating: this is a quick and easy recipe
and it tastes good, too. It's probably pretty
healthy since there's only healthy ingredients
in there. This recipe makes enough for two
portions.
Oven baked Potatoes, Carrots and Chicken
ingredients:
- 1 kg potatoes
- 500g carrots
- 350g chicken thigh filet
herbs etc:
- salt
- white pepper
- rosemary
- garlic
- oil
how to make: wash carrots and potatoes
and cut into pieces of about 3 cm. put them
in one big pan of water and boil until the
potatoes are soft enough to mash. strain and
put the potatoes and carrots on an oven tray.
spread potatoes and carrots over the tray equally
with a hole in the middle where you put the
chicken. flavour with salt, pepper, rosemary
and garlic, and put a bit of oil on the carrots
and potatoes. Bake in the oven for 30 minutes at
200 celsius.
rating: this is a quick and tasty meal. the
potatoes are really buttery and soft and every-
thing just tastes good. serves 3-4 depending
on portion size.
Whole Chicken out of the Oven
1 chicken
2 tablespoons of oil (olive or sunflower)
2 teaspoons of paprika powder
2 teaspoons of thyme
2 teaspoons of salt
2 teaspoons of garlic powder
1 teaspoon of onion powder
1 teaspoon of black pepper
1 teaspoon of oregano
3 cloves of garlic
bit of butter
how to make: put the raw chicken in an oven dish.
preheat the oven to 180 celsius or 365 fahrenheit.
first cover all sides of the chicken in oil, then
cover in the mix of spices (they will stick to the oil)
put the butter and the garlic cloves inside the chicken.
bake the chicken in the oven for half an hour, then
flip it over and bake it like that for another half hour.
flip it again, cook it for another half hour. Then, lower
the temperature to 150 celsius, flip it once more, and
cook it for another half hour. so in total, it'll have
been in the oven for two hours.
rating: I used to make this together with my
grandma, so I have fond memories of it. The chicken
was pretty good, too. this probably could serve four
if you're also serving vegetables and potatoes, but if
you're only serving the chicken, it's probably enough
for two people.
Dessert Recipes
No-Bake Chocolate Cake Thing
- two eggs (optional)
- 250g butter
- 200g sugar
- 50g cocoa
- 300g tea biscuits
- cake tin to put it in
how to make: crumble up biscuits into pieces
that are around the size of your fingernail. melt
butter in a pan and mix together with sugar,
cocoa and eggs. mix the broken biscuits into
the cocoa mixture. combine into a cake tin,
cover with foil and let cool in the fridge
for around four hours.
rating: extremely delicious. you should
make this immediately. don't put the eggs in
if this is going to be eaten by a sick,
elderly or pregnant person.
Cocktail Recipes
Detective's Delight
- one Yakult bottle
- one part Cognac
rating: first original cocktail I ever made,
based on the TV show Baantjer. I don't
recommend making this cocktail as it doesn't
taste good.
Evil Milk
- one part Disaronno Velvet
- three parts vodka
rating: this is just disaronno velvet except
it's harder to drink. I see no reason to make this
except that it kind of looks like milk so I guess that
could be funny, I don't know.
Nice Milk
- half glass Disaronno Velvet
- half glass Liquor 43 or generic replica
rating: 'Evil Milk's redemption arc. This
tastes really nice. It's just almond cream and
vanilla so I don't really know what I was expecting.
